The story of Ca' del Baio begins from this vineyard, cultivated in one of the best known Langa Crus in the world, and this wine contains the precious, refined and elegant fruit of our oldest vineyards.
Vinification
the de-stemmed grapes ferment on the skins in thermo-conditioned steel tanks for about 60 days. The maceration of the grapes takes place through submerged cap skins. The wine ages for 24 months in wood, partly in large oak barrels and partly in French tonneaux. Refine in bottle for 6 months.
Tasting Notes
Bright color , garnet red with orange hues; intense bouquet , with fruity aromas of morello cherries and floral violets. Spicy notes of black pepper, licorice and goudron; dry, warm, soft taste , it reveals a velvety, rich and persistent taste.
