This wine comes from the Premsal and Callet vines in the area of Felanitx where the red soil gives the wine all its character and maximum balance.
Hand selection of the grapes when they arrive at the winery. A peculiar maceration for 10 hours followed by pressing and and a very careful clarification. The production is low and the selection is very meticulous so that it can be subject to medium ageing whilst maintaining all of its freshness.
The fermentation is done at 16ºC. With 100% of the wine fermented & aged in cement tanks, where it stays on its lees for a period of 4 months.
