Our Natural Wines

While there is no universally accepted definition of natural wine, it is generally agreed to be wine that is farmed organically and biodynamically, using permaculture and made; or rather transformed;  without adding or removing anything in the cellar. No additives or processing aids are used, and ‘intervention’ in the naturally occurring fermentation process is kept to a minimum. As such neither fining, neither tight filtration are used. The result is a living wine – wholesome and full of naturally occurring microbiology

This new cuvée is a blend of equal parts Chardonnay & Savagnin. The wine gets prolonged skin contact, but is topped up regularly (ouillé) to prevent oxidation.

A blend of Chardonnay from the Jura and the Mâconnais plus 30% Riesling from a biodynamic vineyard in Alsace, co-fermented. Élevage occurs over one year in 7-10 year-old barriques.
