The 2021 Pierre Mayeul Bourgogne Blanc offers a classic introduction to white Burgundy, shaped by a blend of heritage vineyards and a philosophy rooted in tradition. Pierre Mayeul is a collective label created by three winemakers in Burgundy who share access to carefully selected plots across the Côte d’Or, bringing together regional knowledge and craftsmanship. This cuvée embodies their aim: to produce wines that are authentic, approachable, and true to Burgundy’s storied terroirs.

The fruit comes from vineyards in the Côte de Beaune and Côte Chalonnaise, where Chardonnay thrives on limestone and clay-rich soils that lend both structure and minerality. The 2021 vintage, cooler and more restrained than some of the years preceding it, produced wines with lively acidity, freshness, and precise aromatics. These conditions favored elegant, terroir-driven expressions rather than opulent ripeness.

Winemaking at Pierre Mayeul follows a careful balance between purity and texture. Grapes are hand-picked, gently pressed, and fermented in stainless steel to preserve freshness, with a portion aged in French oak barrels — some new, mostly neutral — to add subtle richness and roundness. A period of aging on fine lees enhances mouthfeel and complexity, contributing faint toasty and nutty nuances without overwhelming the Chardonnay’s natural clarity.

In the glass, the wine shows a pale straw yellow with glints of green. The nose is refined and expressive, offering aromas of green apple, pear, and citrus zest layered with hints of acacia blossom and a whisper of hazelnut from its time in oak. On the palate, it is medium-bodied with crisp acidity, carrying flavors of lemon, orchard fruit, and a chalky mineral edge that reflects its limestone origins. The finish is clean and persistent, leaving a refreshing impression of citrus and wet stone.

Versatile and food-friendly, the 2021 Bourgogne Blanc is a natural match for roasted poultry, grilled white fish, creamy pastas, or soft cheeses like Brie. Best served at 10–12°C in a Burgundy bowl glass, it benefits from a little air to allow its subtle oak and mineral character to unfold. While approachable now, it can be cellared for 3–5 years to develop richer notes of honey, almond, and brioche.
