We take some of this same white spirit and age it in charred, white oak Quarter Casks to create our Dad's Hat? Pennsylvania Rye Whiskey. These barrels are stored in conditions similar to those employed by rye whiskey makers several generations ago. The best Pennsylvania rye whiskey was aged in a temperature controlled environment. Articles written during the heyday for Pennsylvania Rye describe aging warehouses that were kept at controlled temperatures year round.
Floral and spicy on the nose with a well-balanced mouth feel and flavor — up-front and back-end spice, cinnamon on the mid-palate. Underlying notes of dried fruit and black cherry with hints of tobacco, vanilla and oak.
