A handcrafted small batch gin that takes inspiration from the lush Italian gardens on West Cork's Garnish Island. The recipe includes locally foraged botanicals some of which include hibiscus, iris, rose, rosemary and thyme.

Garnish Island Gin is handcrafted by one of Ireland’s few female distillers, Deirdre Bohane. 16 carefully chosen botanicals are cold infused overnight to release their essential oils and then slowly distilled in small batches in our pot still. This full-bodied and intensely aromatic gin perfectly captures the unique, exotic character of Garnish Island.

Nose: Bright floral aromas of iris, rose and hibiscus marry beautifully with hints of rosemary and thyme.

Palate: Soft, lingering glow on the finish with herbaceous and citrus notes and just a hint of spice.

West Cork Irish Whiskey is Produced, Distilled, Matured, and Bottled On-site at West Cork Distillers, and Sells in Over 70 Countries Worldwide.

Each bottle is Triple Distilled, Non-Chill Filtered and carefully crafted using the finest of Local Ingredients

We don’t say it about ourselves, but it has often been said about West Cork Distillers that it is a place built and run by the people, for the people. Formed in 2003 by childhood friends, John O’Connell, Ger McCarthy and Denis McCarthy, distilling began in a room at the back of Denis’ house in Union Hall with two small stills.

As our business expanded, the decision to relocate was made in 2014. Much of this distillery equipment was handbuilt as needed, such as the Rocket, reported to be ‘the fastest still in the world’ at the time.

Today, we operate out of a 12 acre site in Skibbereen, west Cork. The distillation capacity has increased to 4 million litres of alcohol in 2020 and we employ over 80 people.

As a growing company, we are committed to providing sustainable employment to this unspoiled part of the world we call home.

West Cork itself has a proud history in artisan food and beverage production and we intend to uphold this fine reputation. We source the best of ingredients locally where possible and rely on many local service providers to deliver our product worldwide.
